This recipe is one you will all recognize from Mom (Tauna). It's become a tradition to eat this recipe from Mom's friend Louise Crosby every year at Thanksgiving. I never liked yams until I had this casserole at my first Thanksgiving with the Lowe family. Yummy!!
Sliced yams
Sliced apples
Butter
2 c. pineapple juice
¾ c. sugar
1 square butter
1 tsp. salt
3 Tbsp. cornstarch
Grease casserole dish with butter. Layer yams and apples twice in the dish. Boil pineapple juice, sugar, square of
butter, salt, and cornstarch until thick.
Pour over yams and apples until barely covered. Bake at 300° for 1 hour.
